Golden Cornbread

What I don’t say here is that you melt the butter (or better, bacon grease) in a cast iron pan, which has been pre-heating in the oven at 425°F and then pour the rest of the batter into it. One of those things that goes without saying here, but likely needs to be said elsewhere.

Golden Cornbread

Bob's Red Mill: Our classic cornbread recipe. Corn flour provides a lighter, more cake-like texture.

Ingredients

  • 1 cup corn flour
  • 3/4 cup white flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar (optional)
  • 1 cup milk
  • 1/4 cup melted butter (or bacon fat)
  • 1 egg

Instructions

  • Preheat oven to 425°F. Oil and 8×8-inch baking pan and set aside.
  • Sift together dry ingredients into a bowl. Add egg, milk and butter and mix until smooth. Do not overmix.
  • Pour into prepared pan and bake for 20 – 25 minutes.

Notes

I used all-purpose white flour and real buttermilk. With buttermilk, cut baking powder in half and add 1½ tsps. baking soda.
